A deeply flavorful blackcurrant compote with a sweet‑salty balance and beautiful depth. Fresh blackcurrants are cooked down with their salt‑cured counterparts, bright citrus, ginger, wild bergamot, and a splash of C. Cassis aperitif. The richness comes from Bissana honey — a rare, tree‑hive honey harvested by a women‑led agroforestry co‑op in Ethiopia’s Kafa biosphere. Nutty, almost marzipan‑like, it adds a warm complexity that ties everything together. A small jar of savory‑sweet magic for cheese boards, toast, or spooning straight from the jar.
