The Italian plum is a European species known for its nectary sweet golden flesh, powdery purple skin, and tangy, spicy edge for an unforgettable flavor profile. First, we slow-cook plums into a silky, ultra-concentrated concoction. Then, we finish with a secret from the Italians - a tiny touch of black pepper - for the most floral, velvety, amaretto-like, and utterly delicious sugar-plum-punch of a bite.
